A Fresh Berry Salad You’ll Make All Season Long
Fresh Berry Salad with Poppy Seed Dressing
I think it is pretty clear that if I am going to make a salad it is going to be delicious. None of these boring, basic “house” salads come out of the Burton house! Salads can be light and refreshing as well as hearty and filling. They can be a starter or the main course. It all depends upon your ingredients and how hungry you are! This salad is no exception. It goes well as a starter or you can add rotisserie chicken or grilled shrimp to make it a full meal. Either way it is delicious and absolutely perfect for a Ladies Luncheon.
Ingredients
1 /2 C sliced strawberries
1/2 C black berries
1/2 C raspberries
1 sliced shallot or red onion*
1/2 C crumbled feta or goat cheese
1/3 C slivered toasted almonds
mixed greens
Dressing Ingredients
Juice of 1 lemon
1 Tbs. champagne vinegar
1 Tbs. honey
4 Tbs. Greek Yogurt
pinch salt & freshly ground pepper to taste
1/2 tsp sugar
1/2 C Extra-virgin olive oil
1 Tbs. poppy seeds
Directions
Place mixed greens in a large salad bowl and top with remaining salad ingredients. Combine dressing ingredients in a canning jar, twist the lid on tight and shake well until emulsified. Drizzle dressing over salad when ready to serve or serve along side and allow each person to dress their own salad.
*TIP-soaking the shallot or red onion in cold water and then draining and patting dry takes some of the sharp bite out of the onion.
